Mango purée

Mango purée

Ingredients

  • 1/2 ripe mango

Contains: None of the common allergens

Method

  1. Cut the mango cheeks off the stone and score the flesh.
  2. Scoop it out and blend or mash smooth — a ripe mango needs no cooking.
  3. Serve at room temperature.
Safety: Only ripe, soft mango for now. Underripe mango is firm and fibrous and the wrong texture for a first eater.
Storage: Fridge 1 day, freezer 1 month.
Tip: Fragrant, sweet, and a different colour from everything else so far. Ripe means it gives under your thumb and smells of mango at the stem.
