Chicken and sweet potato mash

Chicken and sweet potato mash

Ingredients

  • 1 small chicken thigh, boneless and skinless
  • 1 small sweet potato
  • 100 ml water or unsalted stock

Contains: None of the common allergens

Method

  1. Dice the chicken small and the sweet potato into cubes.
  2. Simmer both in the stock, covered, 15 minutes until the chicken is cooked through with no pink and the potato is soft.
  3. Mash with a fork, keeping soft lumps. Loosen with the cooking liquid.
  4. Cool to lukewarm.
Safety: Chicken cooked right through — no pink, no pink juices. Mash it well; stringy meat is hard to manage at this age.
Storage: Fridge 2 days, freezer 1 month.
Tip: First meat, and thigh is the cut: it stays tender where breast turns to string.
