Soft chicken and rice bowl
- Age: 10–12 months (Self-feeding)
- Texture: Family meal
- Prep: 10 min
- Cook: 20 min
- Makes: 2 portions
Ingredients
- 1 small chicken thigh, boneless and skinless
- 4 tbsp rice
- 1 small carrot, finely diced
- 200 ml unsalted stock or water
Contains: None of the common allergens
Method
- Dice the chicken small — no piece wider than your little fingernail.
- Put everything in a small pan and simmer, covered, for 20 minutes, until the rice is soft and the chicken is cooked right through with no pink.
- Check the texture: it should be soft enough to squash against the roof of your mouth with your tongue.
- Cool to lukewarm and let your baby eat it by hand or spoon, as they prefer.
Safety: Cooked right through, with no pink and no pink juices.
Storage: Fridge 1 day. Rice is best eaten the day it is cooked.
Tip: Thigh meat stays soft where breast goes dry and stringy, which is the usual reason a baby spits chicken out.
