Chicken, apricot and couscous
- Age: 8–10 months (New textures)
- Texture: Mash
- Prep: 5 min
- Cook: 17 min
- Makes: 2 portions
Ingredients
- 1 small chicken thigh, boneless, diced
- 2 dried apricots, chopped fine
- 3 tbsp couscous
- 150 ml water or unsalted stock
Contains: Wheat
Method
- Simmer the chicken and apricots in the stock 12 minutes until the chicken is cooked through.
- Take off the heat, stir in the couscous, cover and leave 5 minutes to swell.
- Chop the chicken very small and mash everything together, loosening with water.
- Cool to lukewarm.
Safety: Cooked right through, with no pink. Apricots chopped fine — whole dried fruit is sticky and a choking shape.
Storage: Fridge 1 day.
Tip: Sweet, soft and Moroccan in spirit. Dried apricots are a concentrated iron source as well as sweetness.
