Mild kedgeree
- Age: 12–18 months (Family food)
- Texture: Family meal
- Prep: 10 min
- Cook: 25 min
- Makes: 2 adults and 2 children
Ingredients
- 300 g haddock or cod, skinless
- 200 g rice
- 1 onion, chopped
- 1 tsp mild curry powder, no salt
- 4 tbsp peas
- 3 eggs, hard-boiled
- 2 tbsp butter
Contains: Fish, Egg, Milk
Method
- Cook the rice. Poach the fish in water 8 minutes and flake it, checking twice for bones.
- Soften the onion in the butter with the curry powder; stir in the rice, peas and fish.
- Top with quartered eggs. Serve your child's portion, then salt the adults'.
Safety: Bones: check by hand, not by eye, and do it twice. Eggs cooked hard. Cool cooked rice quickly. Serve your child's portion first, then salt the rest for the adults.
Storage: Eat the day it is made.
Tip: Fresh fish rather than smoked, which is far too salty for a toddler. The curry powder gives the colour and flavour.
