- Prep: 8 min
- Cook: 25 min
- Makes: 2 adults and 2 children
Ingredients
- 1 onion, chopped
- 1 red pepper, diced
- 400 g tinned tomatoes, no added salt
- 1 tsp ground cumin
- 1 tsp mild paprika
- 4 eggs
- 2 wholemeal pittas
Contains: Egg, Wheat
Method
- Soften the onion and pepper; add the tomatoes and spices and simmer 15 minutes until thick.
- Make four hollows and crack in the eggs; cover and cook 8 minutes until the whites and yolks are set.
- Serve with pitta fingers for dipping. Chop your child's egg; salt the adults'.
Safety: Eggs set right through for your child, no runny yolk. Serve your child's portion first, then salt the rest for the adults.
