Potato pancakes
- Age: 12–18 months (Family food)
- Texture: Family meal
- Prep: 12 min
- Cook: 16 min
- Makes: 2 adults and 2 children
Ingredients
- 3 potatoes, grated and squeezed
- 1 onion, grated
- 2 eggs
- 3 tbsp plain flour
- 2 tbsp olive oil
- 4 tbsp plain yoghurt, to serve
Contains: Egg, Wheat, Milk
Method
- Squeeze the grated potato hard in a cloth. Mix with the onion, eggs and flour.
- Fry spoonfuls in the oil 4 minutes a side until golden and cooked through.
- Serve with yoghurt. Cool your child's; salt the adults'.
Safety: Cool your child's portion — the centre holds heat. Serve your child's portion first, then salt the rest for the adults.
Storage: Fridge 1 day; reheat in a dry pan.
Tip: Latkes, rösti, boxty — every kitchen has a version. Squeezing the potato is what makes them crisp.
