Mushroom risotto
- Age: 12–18 months (Family food)
- Texture: Family meal
- Prep: 8 min
- Cook: 30 min
- Makes: 2 adults and 2 children
Ingredients
- 200 g risotto rice
- 200 g chestnut mushrooms, sliced
- 1 onion, chopped
- 800 ml unsalted stock
- 2 tbsp butter
- 3 tbsp parmesan, grated
Contains: Milk
Method
- Soften the onion and mushrooms in half the butter 8 minutes.
- Add the rice; then the hot stock a ladle at a time, stirring, 20 minutes until soft.
- Stir in the rest of the butter and the parmesan. Serve your child's portion, then salt the adults'.
Safety: Mushrooms sliced thin and cooked soft. Serve your child's portion first, then salt the rest for the adults.
Storage: Eat the day it is made.
Tip: Cook it a few minutes past where you would for yourself — soft grains hold together on a toddler's spoon.
