Slow pork and apple mash

Slow pork and apple mash

Ingredients

  • 60 g pork shoulder, diced small
  • 1 sweet eating apple
  • 1 small potato
  • 150 ml water or unsalted stock
  • 1 pinch dried sage

Contains: None of the common allergens

Method

  1. Simmer the pork in the stock with the sage, covered, 30 minutes until it falls apart.
  2. Add the peeled, diced apple and potato for the last 15 minutes.
  3. Shred the pork fine with two forks and mash everything together, loosening with the liquid.
  4. Cool to lukewarm.
Safety: Cooked right through, with no pink. Shredded very fine; stringy meat is hard to manage at this age.
Storage: Fridge 2 days, freezer 1 month.
Tip: Pork and apple is an old pairing for a reason. Shoulder, cooked slowly, shreds soft where leaner cuts turn stringy.
