Little vegetable fritters
- Age: 10–12 months (Self-feeding)
- Texture: Finger food
- Prep: 10 min
- Cook: 8 min
- Makes: 8 small fritters
Ingredients
- 1 medium courgette, grated
- 1 small carrot, grated
- 1 egg
- 3 tbsp plain flour
- 1 tbsp olive oil
Contains: Egg, Wheat
Method
- Grate the courgette and carrot, then squeeze the courgette hard in a clean cloth — wet batter will not hold together.
- Mix with the egg and flour into a thick batter.
- Heat the oil in a pan over medium-low. Drop in tablespoons of batter and flatten each one slightly.
- Cook 3 minutes a side until golden and firm right through.
- Cool before serving.
Safety: Cool fully before handing over — the inside stays hot much longer than the outside.
Storage: Fridge 2 days, freezer 1 month. Reheat until hot through, then cool again.
Tip: These are the recipe parents come back to. They freeze well, they are eaten cold, and they hide a surprising amount of vegetable.
