Mild family chicken curry
- Age: 12–18 months (Family food)
- Texture: Family meal
- Prep: 10 min
- Cook: 35 min
- Makes: 2 adults and 2 children
Ingredients
- 4 chicken thighs, boneless, diced
- 1 onion, chopped
- 2 tbsp mild curry paste, low-salt
- 400 ml coconut milk
- 1 sweet potato, diced
- a handful spinach
- 200 g rice
Contains: None of the common allergens
Method
- Soften the onion; stir in the curry paste for a minute. Add the chicken and brown.
- Add the coconut milk and sweet potato; simmer 25 minutes until the chicken is cooked through and the potato soft.
- Wilt in the spinach. Serve on rice; chop your child's chicken small. Salt and chilli for the adults at the table.
Safety: Cooked right through, with no pink. Serve your child's portion first, then salt the rest for the adults.
Storage: Fridge 2 days, freezer 2 months.
Tip: Check the paste for chilli and salt — mild ones exist. Heat goes on the adults' plates as chilli flakes, never in the pot.
