Tomato soup with cheese toastie

Tomato soup with cheese toastie

Ingredients

  • 800 g tinned tomatoes, no added salt
  • 1 onion
  • 1 carrot
  • 400 ml unsalted stock
  • 1 tbsp olive oil
  • 4 slices wholemeal bread
  • 4 tbsp grated cheese

Contains: Wheat, Milk

Method

  1. Soften the onion and carrot; add the tomatoes and stock and simmer 20 minutes. Blend smooth.
  2. Make cheese toasties in a dry pan; cut into fingers.
  3. Serve the soup lukewarm with toastie fingers to dunk; salt the adults' bowls.
Safety: Serve lukewarm; melted cheese stays hot. Serve your child's portion first, then salt the rest for the adults. Under three, the daily limit is about 2 g of salt in total.
Storage: Soup: fridge 3 days, freezer 2 months.
Tip: The lunch of every rainy day. Dunking is the point.
