Black bean soup
- Age: 2–3 years (Little cook)
- Texture: Family meal
- Prep: 8 min
- Cook: 25 min
- Makes: 2 adults and 2 children
Ingredients
- 800 g tinned black beans, rinsed
- 1 onion, chopped
- 1 red pepper, diced
- 1 tsp ground cumin
- 800 ml unsalted stock
- 1 squeeze lime
- 4 tbsp plain yoghurt
Contains: Milk
Method
- Soften the onion and pepper; add the cumin, beans and stock and simmer 20 minutes.
- Blend half. Your child squeezes the lime and swirls in the yoghurt.
- Serve lukewarm with bread; salt the adults'.
Safety: Half blended, rest of the beans squashed; serve lukewarm. Salt the adults' portions at the table, not in the pan.
Storage: Fridge 3 days, freezer 2 months.
Tip: Jobs for small hands: squeezing lime and swirling yoghurt. A Mexican soup that is mostly protein.
