Vegetable egg-fried rice
- Age: 12–18 months (Family food)
- Texture: Family meal
- Prep: 5 min
- Cook: 8 min
- Makes: 2 adults and 1 child
Ingredients
- 150 g cooked rice, cooled
- 2 eggs
- 4 tbsp frozen peas and sweetcorn
- 1 spring onion, chopped
- 1 tsp low-salt soy sauce
- 1 tbsp sesame oil or vegetable oil
Contains: Egg, Soy, Sesame
Method
- Heat the oil; scramble the eggs and set aside.
- Fry the rice with the vegetables 3–4 minutes until hot through.
- Stir the egg back in with the spring onion and the soy sauce. Serve your child's portion, then add more soy for adults.
Safety: Cool cooked rice quickly and eat within a day; rice left warm is a real food-poisoning risk. Sweetcorn is squashed for a young toddler.
Storage: Eat the day it is made.
Tip: The fastest family dinner there is. Rice cooked earlier and cooled quickly in the fridge fries better than fresh.
