Sweet potato purée

Sweet potato purée

Ingredients

  • 1 medium sweet potato
  • 2–3 tbsp your baby's usual milk, or the cooking water

Contains: None of the common allergens

Method

  1. Peel the sweet potato and cut it into even 2 cm cubes so they finish cooking at the same moment.
  2. Steam for 12–15 minutes, until a cube falls apart under light pressure from a fork.
  3. Blend smooth, loosening with milk or cooking water a spoonful at a time until it drops slowly off the spoon.
  4. Cool to lukewarm and test a little on the inside of your wrist before offering.
Safety: No salt and no sugar. A baby's kidneys cannot handle added salt, and nothing here needs it.
Storage: Fridge 2 days, freezer 1 month. Freeze in an ice-cube tray — one cube is about one first portion.
Tip: Steaming keeps more of the sweetness and the vitamins than boiling does; boiled sweet potato leaves much of both in the water.
